The value of bonds in your portfolio may have decreased due to changes in interest rates. When interest rates rise, the value of existing bonds decreases because they are paying lower interest rates than newly issued bonds. This is known as interest rate risk. Even though EU government bonds are considered safe investments, they are still subject to fluctuations in interest rates, which can impact their value. Additionally, other factors such as economic conditions, inflation expectations, and market sentiment can also affect the value of bonds in your portfolio. **

Sauerkraut is actually a healthy food choice. It is low in calories and fat, while being high in fiber, vitamins C and K, and various beneficial probiotics. However, it is important to watch the sodium content in store-bought sauerkraut, as some varieties can be high in salt. Making homemade sauerkraut allows you to control the ingredients and limit the amount of salt added. **

Yes, sauerkraut is typically vegan. It is made from fermented cabbage and salt, and does not contain any animal products. However, it's always important to check the ingredients list on store-bought sauerkraut, as some varieties may include non-vegan additives such as honey or fish sauce. Homemade sauerkraut is usually vegan as long as no non-vegan ingredients are added during the fermentation process. **

Sauerkraut is not typically considered bitter. It is known for its tangy and slightly sour flavor due to the fermentation process it undergoes. The taste of sauerkraut can vary depending on the recipe and fermentation time, but bitterness is not a common characteristic associated with it. **

Sauerkraut itself can have a mild laxative effect due to its high fiber content, which can help promote healthy digestion and regular bowel movements. The fermentation process of sauerkraut also produces probiotics, which can contribute to gut health and regularity. However, sauerkraut juice made from sauerkraut may have a more concentrated effect due to the higher concentration of fiber and probiotics. Overall, both sauerkraut and sauerkraut juice can contribute to digestive health and regularity. **

Alsatian sauerkraut, also known as choucroute, is a traditional dish from the Alsace region of France and is typically made with white wine, juniper berries, and various meats such as sausages and pork. It has a slightly sweeter and more complex flavor profile compared to traditional sauerkraut. Our sauerkraut, on the other hand, is typically made with just cabbage, salt, and sometimes other vegetables or seasonings, and is fermented to create a tangy and sour flavor. Additionally, Alsatian sauerkraut is often served as a main course, while our sauerkraut is more commonly used as a condiment or side dish. **

Healthy sauerkraut is typically made using traditional fermentation methods that involve only cabbage, salt, and water. Look for sauerkraut that is unpasteurized and contains live cultures, as these probiotics are beneficial for gut health. Avoid sauerkraut that has been pasteurized or contains added sugars, preservatives, or artificial ingredients, as these can diminish its health benefits. **
